Cilantro Black Bean Balsamic Based Salsa |

Refreshing- :) There is another recipe on this site that is very close. I am adding my measurements for my own records :) Ingredients:
1 (14 1/2 ounce) can black beans, drained and rinsed |
1 (11 ounce) can white shoepeg corn, drained |
1/2 yellow bell pepper, chopped |
1/2 red bell pepper, chopped |
1/2 green bell pepper, chopped |
1 bunch green onion, chopped (white part and some green) |
1/2 cup fresh cilantro, chopped |
1/4 teaspoon coriander (or more to taste) |
1/2 cup parsley, chopped |
2 tablespoons olive oil |
4 tablespoons balsamic vinegar |
salt, pepper, cayenne pepper or tabasco sauce |
Directions:
1. I make the day before an event. It is refreshing :) with the balsamic base. I have put over chicken as well - and one time I set it out at BBQ and some people scooped it up like a salad and they loved it :). |
