This recipe looks amazing, although I haven't yet tried it. I sure will, though. I LOVE pigging out on squash during the fall...I basically live on it. I found this recipe in a back issue of Country Magazine that a friend just gave me, (Oct/Nov 2004)and it was submitted by a lady named Donna Cline from Pensacola Florida. Read more . Thank you Donna! Wow. Ingredients:
4 cups cubed peeled butternut squash |
1 medium onion, cut into thin wedges |
2 tbs apple cider |
1 tbs olive oil |
1-1/2 tsp brown sugar |
1/4 tsp salt |
1/8 tsp pepper |
1/8 tsp ground nutmeg |
Directions:
1. Place the squash and the onion in a greased 13x9x2 baking dish. Combine the cider, oil, brown sugar, salt, pepper and nutmeg; pour over squash mixture. 2. Cover and bake at 450ยบ for 35 minutes or until tender, stirring every 10 minutes. 3. Yield 4-6 servings |
