Ciabatta With Spinach and Soft Cheese |

Gourmet snack for when you have spinach in the house. Could use another gourmet style bread. Ingredients:
2 slices sun-dried tomato italian bread |
50 g baby spinach leaves |
1 teaspoon olive oil |
1 tablespoon raisins |
25 g light soft cheese (cream cheese) |
Directions:
1. Lightly toast bread slices. In a small saucepan, wilt spinach leaves with olive oil. Season with salt and pepper and stir in raisins. Place on top of toast and top with light soft cheese. |
