By far the best brownie recipe I've tried. Courtesy of the C.I.A. (Culinary Institute of America, of course.) Ingredients:
cooking spray |
3/4 c (1.5 sticks) butter |
4 oz. unsweetened chocolate |
2 large eggs |
1-1/3 c sugar |
2 tsp vanilla |
1/4 tsp salt |
1/4 cake flour |
1/4 c coarsely chopped walnuts. |
Directions:
1. Preheat oven. 350 F. 2. Melt butter + chocolate together. 3. Whip eggs, sugar, vanilla + salt on high until thick and light in color (4-5 minutes.) 4. Pour some of the egg mixture into the melted chocolate mixture while still stirring, then pour in remaining egg mixture and blend on medium speed. 5. Mix in flour + nuts on low speed until just blended. Batter will be very wet. 6. Pour into greased 9x9 pan. (They tend to be sticky!) 7. Bake until toothpick inserted into the center of the pan comes out with a very crumbs clinging to it (about 30-40 minutes.) 8. Allow to cool completely on a wire rack before cutting into 3-in. square pieces. |
