something different to do with left over chicken for lunch the next day :) Ingredients:
2 cups diced cooked chicken |
1/4 cup mango chutney |
1 small golden delicious apples or 1 small gala apples, cored and finely diced |
1/4 cup finely diced celery |
1/4 cup finely diced red onion |
1/4-1/3 cup low-fat mayonnaise |
salt and pepper, for seasoning |
Directions:
1. Mix all ingredients together. Season to taste with salt and pepper. Use as a sandwich filling or serve on top of a bed of greens. |
