Ingredients:
caster sugar mixed with ground cinnamon to coat
2 eggs, beaten
groundnut or sunflower oil for deep frying
pinch of salt
6 ounce(s) plain flour
1/2 pint(s) water
Directions:
1. Boil the water in a heavy pan, then tip in the flour and salt, and beat vigorously until the ball of dough leaves the side of the pan. Beat in the eggs gradually, until the mixture is smooth and glossy. Put the mixture in a large piping bag fitted with a large rose nozzle. Heat the oil in a saucepan to 190C or until a cube of bread browns in 30 seconds. Piple sections of dough about 10cm long and fry them until golden brown. Remove with a slotted spoon and toss in cinnamon sugar. Serve immediately.
