An easy, light soup for lunch or dinner, Ingredients:
4 cups beef broth |
1 medium onion, chopped |
1 tablespoon parsley, chopped |
1 tablespoon oil |
1 small tomato, chopped |
1/2 cup peas |
1 carrot, chopped |
1/2 cup peanut butter |
Directions:
1. Sauté onion and parsley in oil until brown. 2. Add remaining ingredients and simmer for at least 30 minutes or until carrots are done. |
