Serve this over sturdy/thick whole grain pasta. Spaghetti is too thin to carry this sauce. Ingredients:
16 oz can diced tomatoes |
4 tbsp tomato paste |
1/4 medium onion |
1 clove garlic |
1 medium tomato, diced |
1/2 cup kalamata olives |
1 celery stalk |
1 medium carrot |
2 tbsp olive oil |
1/8 tsp salt |
1 tsp dried basil |
1 tsp parsley |
1/4 cup red wine |
Directions:
1. Dice evrything. I like mine chunkier, so I dice larger, but if you like a smoother sauce, dice smaller or use a food processor to pulverize the ingredients. 2. Sweat the carrots, celary, and onion in the olive oil with the salt. Add garlic after about 5 minutes and continue sweating for another 2-3 minutes. 3. Add everything but the wine into the pot and simmer for 10 minutes. After the 10 minutes, add the wine and simmer for another 10 minutes. Then enjoy! |
