Chunky Vegetable Fricasse |

A unusual and healthy way to serve a great veggie side dish. Ingredients:
1 1/2 lb bag of frozen mixed vegetables |
1/4 lb grated sharp cheddar cheese |
1 cup sour cream |
2 eggs, beaten |
pepper to taste |
3/4 cup pretzels, crushed |
2 tbsp chopped hazelnuts |
Directions:
1. Preheat oven to 425F. 2. Add vegetables to a pot of boiling water, bring back to a boil and cook for 3 minutes. 3. Drain. 4. Reserve 2 tbsp cheese. 5. Stir the remaining cheese into sour cream. 6. Mix in eggs. 7. Season to taste with pepper. 8. Mix in the vegetables and transfer to a greased shallow ovenproof dish. 9. Mix pretzels with reserved cheese and nuts. 10. Scatter over veggie mixture. 11. Bake on the top shelf of the oven for 12-15 minutes or until golden and slightly puffed. |
