Chunky Vegetable Fricasse

A unusual and healthy way to serve a great veggie side dish.
Ingredients:
1 1/2 lb bag of frozen mixed vegetables
1/4 lb grated sharp cheddar cheese
1 cup sour cream
2 eggs, beaten
pepper to taste
3/4 cup pretzels, crushed
2 tbsp chopped hazelnuts
Directions:
1. Preheat oven to 425F.
2. Add vegetables to a pot of boiling water, bring back to a boil and cook for 3 minutes.
3. Drain.
4. Reserve 2 tbsp cheese.
5. Stir the remaining cheese into sour cream.
6. Mix in eggs.
7. Season to taste with pepper.
8. Mix in the vegetables and transfer to a greased shallow ovenproof dish.
9. Mix pretzels with reserved cheese and nuts.
10. Scatter over veggie mixture.
11. Bake on the top shelf of the oven for 12-15 minutes or until golden and slightly puffed.
