A chowder so delicious, you will want to make it forever!! Ingredients:
1 tbps. oliive oil |
2 alrge onions, chopped |
2/3 cupo potato, peeled and roughly chopped |
4 slices celery, chopped |
4 slices smoked back bacon |
2 (400 g) cans chopped tomatoes with herbs |
2 cups stock (fish or chicken) |
2 tablespoons tomato puree |
salt & freshly ground black pepper |
1 green pepper, dessede and chopped roughly |
1 lb cod fish fillet, skinned and cubed (fresh or defrosted) |
fresh parsley |
granary bread |
Directions:
1. Heat Oil in large saucepan. Add onion, celery and bacon and cook for 5 minutes. Add tomatoes and stock and bring to a boil. Reduce heat and cook for 12 minutes until potatoes are tender. 2. Add tomato purée, seasoning, green pepper and fish. Return to simmering point and cook for 7 minutes. 3. Sprinkle with parsley and serve with chunks of bread. |
