Chunky Potato and Ham Soup |

This is a lovely ham and potato soup...great way to mix up leftover ham from the holidays. Recipe courtesy of Southern Food. Ingredients:
3 medium red potatoes, peeled and cut into cubes |
2 cups water |
1/4 teaspoon salt |
1/4 cup onion, finely chopped |
3 tablespoons butter |
3 tablespoons all-purpose flour |
ground black pepper |
3 cups milk |
1 cup cheddar cheese, shredded |
1 cup ham, cooked and cubed |

Directions:
1. Bring water and 1/4 teaspoon salt to a boil. 2. Add potatoes and cook until tender. 3. Drain and reserve 1 cup of cooking liquid (add water to measure 1 cup if necessary). 4. Melt butter in a medium saucepan over medium heat. 5. Saute chopped onion in the hot butter until tender. 6. Add flour to butter and onion mixture and stir until smooth. 7. Season with a little pepper and continue to cook and stir for 1 minute. 8. Gradually add potatoes, reserved 1 cup of cooking liquid, and milk. 9. Stir well and add cheese and ham. 10. Simmer potato ham soup over low heat, stirring frequently, for about 20 minutes. |
