This peanut brittle has a bit of a twist...it has swirls of peanut butter chips and chocolate chips in it. This is one of those can't eat just one piece candy. Ingredients:
1 1/2 tsp. plus 1 1/2 cups butter, divided |
2 cups peanut butter chips, divided |
1 3/4 cups sugar |
3 tbsp. light corn syrup |
3 tbsp. water |
1 1/2 cups salted peanuts, coarsely chopped |
1/2 cups semi-sweet chocolate chips |
Directions:
1. Butter the sides and bottom of a 15x10x1-in. baking pan with 1 1/2 tsp. butter. 2. Sprinkle with 1 cup peanut butter chips; set aside. 3. In a heavy saucepan, bring the suagr, corn syrup, water and remaining butter to a boil over medium heat, stirring constantly. 4. Cook and stir until the butter is melted. 5. Cook, without stirring, until a candy thermometer reads 300 degrees (hard-crack stage). 6. Remove from heat; stir in peanuts. 7. Quickly pour onto prepared baking pan; sprinkle with chocolate chips and remaining peanut butter chips. 8. With a knife, gently swirl softened chips over top of brittle. 9. Cool; break into pieces. 10. Store brittle in an airtight container. |
