Made this a few times and pretty good. A great way to enjoy a meal without the meat. I got this recipe from a little booklet that came in the mail advertising rice. Ingredients:
1 tablespoon oil |
1 medium green pepper, chopped |
1 medium onion, chopped |
2 cloves garlic, minced |
1 (19 ounce) can kidney beans |
1 (19 ounce) can pinto beans |
1 (12 ounce) can kernel corn |
1 (28 ounce) can tomatoes |
1 cup uncooked rice |
1 1/2 cups water |
2 tablespoons chili powder |
1 1/2 ground cumin |
Directions:
1. Heat big pot over medium-high heat. 2. Saute green pepper, onion and garlic until onion is tender. 3. Drain and rinse beans; drain corn. 4. Stir in beans, corn, tomatoes, rice and water into onion mixture; season with chili powder and cumin. 5. Bring to a boil. 6. Reduce heat, cover and simmer 30 minutes, stirring occasionally. |
