Chunky Chicken Salad for a Crowd

I love this recipe because it is so nutritious. I serve this with romaine lettuce or between two slices of live sprouted bread.
Ingredients:
3 lbs boneless skinless chicken breasts, trimmed
4 peeled apples (gala or fuji)
1 medium red onion
1 bunch celery
1 cup walnuts
1 cup light mayonnaise
1/2 cup gourmet garlic mustard
1 bunch italian parsley
salt and pepper
Directions:
1. Cook chicken.
2. Chop coarsely.
3. Wash all fruits and vegetables.
4. Chop them all coarsely.
5. Put all ingredients in a large Pyrex bowl.
6. Toss ingredients with mustard and mayonnaise.
