Chuck Wagon Soup

This dish has been a favorite since my girls where little its a combination of a really good chilli and vegetables and pasta to make a soup...a real warm up kinda soup
Ingredients:
1 lb 80% lean ground chuck
1 1/2 cups diced onion
3/4 cup diced celery
1 cup sliced mushrooms
4 cloves of garlic minced (less if you like or more if you want)
3/4 cup diced carrots
3/4 cup diced green squash
3/4 cup diced yellow squash
2 cans dark red kidney beans (drained)
1 1/2 cups kernel corn
1 chipotle chili chopped fine
2 tsps chili powder (adjust to your taste)
1/2 tsp red chili
2 14 1/2 oz cans del monte diced tomato with zesty jalapeno
10 cups homemade chicken stock or store bought
salt and pepper to taste
2 cups of pasta cooked seperately (2 cups dry not cooked)
grated cheese
sour cream
Directions:
1. In a large pot add 1 tbsp oil over medium high heat add onions, celery and mushrooms and cook till onions are slightly tender add ground beef and cook till browned. Make sure you keep the beef from sticking or clumping.
2. Add remaining ingrediants up to but not includling the pasta. Cook over medium heat for 1 hr or until veggies are somewhat tender.
3. Add your cooked pasta and serve with a doulpe of sour cream and some grated cheddar cheese.
