Christmas Tradition Lemon Pecan Cake |

A Christmas Tradition. Old Family Recipe. Cake bursting with lemon flavor, interspersed with white or golden raisins and pecans. Must have for our Christmas Dinner. Ingredients:
1 pound unsalted butter (4 sticks) |
2 cups sugar |
6 eggs, separated |
2 ounces lemon extract |
4 cups flour, reserve little flour to dust raisins, pecans, before adding |
1 heaping teaspoon baking powder |
1 pound pecans, chopped (medium, not fine) |
1 pound white raisins or golden raisins |

Directions:
1. With mixer, in large mixer bowl, cream butter and sugar *well* 2. In bowl, *whisk* egg yolks thoroughly before adding 3. Add egg yolks to creamed mixture, beating to combine 4. Add lemon extract, beat a few seconds 5. In another bowl whisk flour and baking powder 6. (Mother always put the flour, baking powder on wax paper, then holding the wax paper like a funnel, she slowly poured it into the creamed mixture, while beating slowly) 7. Add flour mixture slowly to creamed mixture, beating on low, combining well as you go 8. Add nuts, raisins, *fold* in thoroughly, batter will be stiff 9. In large bowl, beat egg whites until stiff, but still moist 10. Fold beaten egg whites into mixture 11. Spoon into well greased, lightly floured tube pan (Angel Food, not Bundt) 12. Bake at 275 degrees for 1 hour THEN 13. Bake at 300 for 1 more hour 14. Remove from oven, set on wire rack a few minutes 15. Remove from pan 16. After cooling thoroughly, I usually wrap in heavy duty aluminun foil, but have also placed the cake in an air-tight container until ready to serve 17. When cutting, use a serrated knife 18. NOTE: I remember seeing this same recipe years ago, and it stated to cook the cake at 250 for 2-1/2-3 hours. I think it would be your choice. I have always baked it as directed in the above recipe. Just remember it needs that low temperature, and slow baking! 19. It is truly delicious. |
