These are always popular on a cookie or sweet tray. Ingredients:
1 package semi-sweet chocolate chips |
2-3 tbsp. butter |
1 egg |
1-1/2 cups confectioners' sugar |
1/2 cup coconut or cocoa powder |
1 cup walnuts, chopped |
2 cups miniature marshmallows, either plain or colourful |
Directions:
1. Melt butter and chocolate chips over heat in double boiler. 2. Remove, cool slightly and blend in egg. 3. Stir in powdered sugar, nuts and marshmallows. 4. Roll mixture into balls and roll over coconut to cover. 5. Spoon onto waxed paper and chill until set. 6. Keep refrigerated until ready to serve. |
