Christmas Rice Pudding

Ingredients:
1-3/4 cups uncooked long grain rice
2 cups water
4 cups milk
1-1/2 cups sugar
1 teaspoon salt
1/4 cup butter or margarine
sliced almonds and ground cinnamon, optional
Directions:
1. In a saucepan, combine the rice and watter.
2. Simmer for 10 minutes; add milk and bring to a boil.
3. Reduce heat and simmer, uncovered, for 60-70 minutes or until rice is tender.
4. Add sugar, salt and butter; mix well.
5. Spoon into small bowls or dessert dishes.
6. Garnish with almonds and sprinkle with cinnamon if desired.
7. Yield: 6-8 servings.
