Christmas Oatmeal Cranberry Cookies |

This is a soft oatmeal cookie that has dried cranberries in place of raisins. These are great for Christmas time! Ingredients:
2/3 cup granulated sugar |
2/3 cup packed brown sugar |
2 eggs |
1 teaspoon baking soda |
1 teaspoon vanilla extract |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1 teaspoon ground cinnamon |
3 cups quick oats |
1 cup flour |
1 cup shortening |
1 cup dried cranberries |
Directions:
1. Combine all ingredients EXCEPT oats, flour, and cranberries in mixer. Mix well. 2. Add flour to form dough. Fold in oats and cranberries. 3. Drop 1 -1 1/2 balls of dough on ungreased cookie sheet 2 apart. 4. Bake 9-11 minutes at 350 degrees, or until lightly brown around edges. 5. Do NOT over bake. Cookie will be slighly undercooked and will firm while cooling. Necessary if you want a soft and chewy cookie. 6. Enjoy =). |
