I made this for Christmas this year and was amazed and how easy and delicious it was! It tastes just like Baileys and you have the satisfaction of knowing that you've made it yourself. I found it a bit too potent so added a little extra cream. The recipe is from the November issue of Good Food. Ingredients:
300 g dulce de leche (10oz) |
1 tablespoon instant coffee |
1 teaspoon vanilla extract |
300 ml brandy (1/2 pint) |
430 ml single cream |
Directions:
1. Dissolve the coffee in 1 tablespoon of boiling water. Put the dulce de leche into a large bowl and beat in the coffee, vanilla extract and brandy. The mixture should be smooth. Stir in the single cream until it's all well mixed. 2. Pour into 1 large or several smaller sterilised bottles. The drink will keep in the fridge for 2 weeks. |
