From my Food Writer's Favorites cookbook. Go ahead and splurge by serving this dish at your next Christmas or holiday dinner. This colorful salad is pretty served in a glass bowl. I love cranberries and this salad sounds so good that I may have to make this dish sooner than the holidays. So easy to make. Ingredients:
2 cups cranberries (fresh or frozen, ground in a food processor) |
3 cups miniature marshmallows |
3/4 cup sugar |
2 cups granny smith apples, diced (unpeeled) |
1/2 cup seedless grapes, halved |
1/2 cup pecans, chopped |
1 cup heavy cream, whipped |
Directions:
1. In a mixing bowl, combine cranberries, marshmallows and sugar, refrigerate overnight. 2. Add apples, grapes, and pecans to cranberry mixture; mix well. Fold in whipped cream. Serve immediately. Prep time does not include refrigeration time. |
