This easy recipe is a great starter for Christmas dinner. It will hold over your guests until the turkey and ham are ready! Ingredients:
1 tablespoon butter |
2 cups thinly sliced onions |
1/4 cup balsamic vinegar |
1/2 cup dried cranberries |
1 tablespoon sugar |
1/2 teaspoon salt |
1/2 teaspoon grated orange rind |
16 crackers |
8 ounces reduced-fat cream cheese |
Directions:
1. Melt butter in a pan over medium heat. Add onions and sauté 15 to 18 minutes, or until golden and tender. 2. Stir in vinegar, cranberries, sugar, salt, and orange rind; Cook, stirring occasionally, 2 to 4 minutes or until liquid is reduced to about 2 tablespoons. 3. Spread cream cheese onto the crackers. 4. Top each with cranberry compote. |
