This recipe is always good anytime with any dish. Love the taste of the swiss cheese with the cauliflower. Ingredients:
1 large head cauliflower, broken into florets |
1/4 cup diced green pepper |
1 jar (7.3-oz.) sliced mushrooms, drained |
1/4 cup butter |
1/3 cup all-purpose flour |
2 cups milk |
1 cup shredded swiss cheese |
2 tbsp. diced pimentos |
1 tsp. salt |
Directions:
1. in a large saucepan, cook cauliflower in a small amount of water for 6-7 minutes or until crisp-tender; drain well. 2. In a medium saucepan, saute green pepper and mushrooms in butter for 2 minutes. 3. Add flour; gradually stir in milk. 4. Bring to a boil; boil for 2 minutes, stirring constantly. 5. Remove from the heat; stir in cheese until melted. 6. Add pimentos and salt. 7. Place half of the cauliflower in a greased 2 -qt. baking dish; top with 1/2 the sauce. 8. Repeat layers. 9. Bake uncovered, at 325 degrees for 25 minutes or until bubbly. |
