This recipe was on the back of a glace cherry bag. I am hoping to get time to make it this year for Christmas. I love fruit cake! :) Ingredients:
200 g glace cherries, mixed colours |
125 g butter |
75 g caster sugar |
75 g brown sugar |
2 eggs |
2 tablespoons golden syrup |
1 cup plain flour |
1/4 cup self-rising flour |
1/2 pinch salt |
1/2 teaspoon mixed spice |
1/4 teaspoon nutmeg |
75 g raisins |
125 g sultanas |
125 g currants |
30 g almonds, sliced |
2 tablespoons sherry wine |
Directions:
1. Combine fruit and nuts in a large bowl with sherry, cover and stand overnight. 2. Beat butter till soft, add sugars and beat till creamy. 3. Add eggs, one at a time, while still beating, then add golden syrup. 4. Add sifted flours and spices alternatively with fruit mixture and then mix till combined. 5. Grease and line a 20cm round tin. 6. Spread mixture evenly and bake for approximately 1 hour and 50 minutes in an oven set at 150°C. |
