Delicious and light. We can't get enough of it. Ingredients:
3 bunches kale, cut into bite-size pieces |
2 pounds red grapes |
3/4 pound crumbled feta cheese |
3/4 pound chopped walnuts |
1/2 cup seasoned rice vinegar, or to taste |
1/4 cup water, or to taste |
1/2 cup honey |
1/4 cup olive oil |
Directions:
1. Toss kale, grapes, feta cheese, and walnuts together in a large salad bowl. 2. Stir seasoned rice vinegar and water together to make 3/4 cup total volume. Whisk honey and olive oil into the vinegar mixture until completely integrated; pour over the kale mixture and toss to coat. |
