A very tasty chicken recipe! Ingredients:
4 boneless chicken breasts, sliced lengthwise to create a pocket for the stuffing |
salt & pepper |
14 ounces diced tomatoes |
6 ounces artichoke hearts, quartered |
8 ounces kalamata olives, pitted and halved |
1/2 cup feta cheese, crumbled |
mediterranean herbs |
2 tablespoons olive oil |
2 tablespoons lemon juice |
2 cups baby spinach |
Directions:
1. Preheat oven to 375. 2. Pound breasts. 3. Sprinkle with salt/pepper and herbs. 4. Place each one on foil or parchment paper square. 5. Chop and mix remaining ingredients in a bowl. 6. Stuff chicken with mixture. 7. Stuff a handful of baby spinach in each breast. 8. Poured some lemon juice and some of the olive juice over the chicken 9. Wrap up breast in foil/parchment square 10. Place in baking dish and bake 20-23 minutes. 11. Enjoy over rice - tasty! |
