A very authentic Irish Soda Bread recipe! Ingredients:
6 cups flour |
2 teaspoons baking soda |
2 teaspoons baking powder |
1/2 cup sugar |
1 teaspoon salt |
1 1/2 cups raisins |
1/4 cup margarine |
3 1/2 cups buttermilk |
caraway seed (optional to taste) |
Directions:
1. Preheat oven to 325-350. 2. Sift first 5 ingrediants together. 3. Blend in margarine. 4. Add raisins and caraway seeds. 5. Add buttermilk to make a medium soft dough. 6. Kneed or mix until spongy; dough will be wet. 7. Divide into 2 greased and floured loaf pans. 8. Bake for about 1 hour and 15 minutes - knife inserted into center should come out dry. 9. Optional - brush top with milk while cooling; will soften crust and make it easier to slice. 10. Remove from pans while warm. |
