i have been working my way through all the soyboy recipes with my family because we are always looking for simple, healthy dishes that use tofu - this is simple, and easy to make, but so good. Ingredients:
8 ounces soyboy tofu, sliced into 1/2-inch bricks (caribbean or tofu lin) |
4 -6 cups baby greens |
1 avocado, chopped |
1/4 cup cucumber, sliced |
2 carrots, grated |
1 tomato, chopped |
1 apple, chopped (optional) |
1/2 cup olive oil |
3 tablespoons balsamic vinegar |
1 teaspoon mustard powder |
1 teaspoon honey |
Directions:
1. Pan-fry the tofu in olive oil until barely brown on the edges. 2. Drain on paper towel and let cool. 3. Whisk together dressing ingredients in a small bowl. 4. Mix all of the salad ingredients together in a large bowl and top with the dressing. |
