This is a hearty meal in a bowl. This recipe can be made to be low fat using low fat milk, sausage etc. Ingredients:
1 (20 oz) package shredded potatoes |
1 (14 1/2 oz) chicken broth |
1 (10 oz) whole kernel corn |
2 cups milk |
12 oz package link sausage cut in small slices |
1/3 cup sliced green onions |
1/4 teaspoon pepper |
season to taste with |
salt and pepper |
cilantro sprigs |
green or red bottled hot pepper sauce |
Directions:
1. In a 4 qt dutch oven combine potatoes, chicken broth, and corn. 2. Bring this just to boiling; reduce heat; simmer covered for 10 minutes or until potatoes are just tender, stir occasionally. 3. Using a potato masher, slightly mash potatoes. 4. Stir in milk, sausage, green onions and pepper. 5. Season to taste with rest of ingredients. |
