Chorizo Upside Down Cornbread

this is a recipe from the Texas Home Cooking cookbook... you can change the sausage or the cheese to change the flavor of the dish.. the recipe suggests that you use add some Jalapeno to the cornbread recipe.
Ingredients:
1 pound bulk chorizo or chipotle chorizo
1 medium onion, chopped
1 medium green bell pepper, chopped
1 cup ( 4-ounces ) grated mild or medium cheddar cheese
1 recipe of your favorite corn bread
Directions:
1. In a cast-iron skillet fry the chortizo with the onion and bell pepper over medium heat until the sausage is cooked through and the veggies are soft
2. pour off and discard any fat from the skillet
3. arrange the sausage in a layer in the skillet and sprinkle the cheese over it
4. spoon the cornbread batter over the cheese layer
5. bake in a 400' oven for 20 minutes or until the cornbread is lightly browned
6. remove skillet from the oven
7. let dish stand for 5 minutes
8. run knife around the edge of the cornbread and invert the skillet onto a plate.
9. serve immediately
