hardy and filling Ingredients:
5 cups chicken stock |
3 cups pumpkin puree |
3/4 cup heavy cream |
1# chorizo-hopped,coursly |
2 tbs. oregano |
1/2 tsp. cumin |
5 cloves of garlic,peeled and chopped finely |
2 potatoes,peeled and diced into 1/2 cubes |
1/2 cup cilantro,chopped |
1/2 & 1/3 cups of chopped onions |
1 tbs. oil |
Directions:
1. heat oil in a large pot. saute the 1/3 cup of onions and garlic over medium heat, about 1 minute 2. carefully add stock,pumpkin,chorizo and potaroes. stir in oregano and cumin. bring to a boil,then turn down heat to a simmer. simmer for 45 minutes, or until potatoes are soft. 3. remove from heat and let cool down for 10 minutes. 4. stir in cream and serve immediately topped with a Tbs. each, of chopped onions and cilantro. |
