Spicy chorizo sausage and cheese in a puff pastry. Triple these up and serve with icy cold beer for superbowl, or just nibble a few with a glass of wine. These can be made 2 days ahead and chilled without the glaze in a plastic refrigerator bag. Read more . Just let them return to room temp, and glaze before baking. Ingredients:
8 oz. frozen puff pastry sheets |
4 oz. chorizo sausage, chopped |
1/2 cup coarsely shredded mozzarella (or any mild cheese) |
1 egg, beaten |
paprika to dust |
Directions:
1. Roll out the pastry thinly on a flour dusted surface. 2. With a 3 cutter, stamp out as many rounds as you can (approx. 16). 3. Preheat oven to 450 degrees. 4. Put chorizo and cheese in a bowl and toss to combine well. 5. Place a a little of the chorizo mixture in the center of a round and fold in half sealing the edges together. 6. Repeat for all the rounds and place them on a non-stick baking sheet. 7. Brush each pasrty lightly with the beaten egg. 8. Dust the tops with paprika, and bake for 12-15 minutes until puffed and golden brown. 9. Transfer to a wirwe rack and let cool 5 minutes. 10. Serve. |
