This is a great chilequile recipe, basically fried tortillas pieces with eggs and soft mexican chorizo Ingredients:
4 eggs |
1/2 tube of soft chorizo(casing removed)(find this in the mexican deli section) it usually comes in a long thick tube, comes in pork or beef, i find pork is better. |
1/3 of small yellow onion chopped |
4 tortillas cut in cubes |
good pinch of crushed red pepper |
salt and pepper to taste |
vegetable oil |
Directions:
1. in a saucepan, add about 2 tbs of veg oil, when hot add tortilla pieces and cook until golden brown. drain on paper towels. In same pan add a 1 tbs of veg oil and chorizo, with spoon seperate chorizo very well until crumbly looking and add crushed red peppers, fry chorizo stirring frequently until it looks darker. it is important to cook all the way. once cooked all the way, add tortila pieces back and stir. Whisk eggs together in bowl and add to pan, stiring frequently. add salt and pepper to taste. Once eggs have set, remove from heat and serve. I like to serve this with fresh refried beans! mmmm enjoy! |
