CHORIZO BREAKFAST EGG PATTIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sexton Estate in Addison, Texas in 1986. Ingredients:
6 eggs |
2 scallions green and white parts finely chopped |
1/2 pound chorizo cooked and well drained |
1/2 cup freshly grated sharp cheddar cheese |
1/2 cup seasoned bread crumbs |
1/4 cup chopped parsley |
1/2 teaspoon kosher salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Whisk eggs in bowl then stir in remaining ingredients. 2. For each patty spoon a large tablespoon of mixture onto lightly greased skillet. 3. Cook until golden on bottom about 2 minutes. 4. Flip and cook 2 minutes longer then serve immediately. |
