The combination of sweet, acidic tomatoes with slaty, spicy chorizo and tangy vinegar is a match made in heaven.
Ingredients:
3 beefsteak tomatoes, cut into wedges
1/2 red onion, thinly sliced
3 sprigs thyme, leaves picked
1 pinch salt and pepper
1 tablespoon red wine vinegar
2 tablespoons extra virgin olive oil
4 ounces chorizo sausage, sliced diagonally
Directions:
1. Put the tomatoes in a bowl with the onion and thyme.
2. Season with salt and pepper, then drizzle with the vinegar and oil.
3. Let the flavors mingle while you cook the chorizo.
4. In a hot dry pan, fry the chorizo slices until browned on both sides.
5. Serve the tomatoes with the fried chorizo, drizzle with a little oil from the pan.
