Chorizo And Cheese Quesadillas |

This can be served as a main course or as an appetizer. As we can't get decent Mexican here in England we make Mexican meals quite often at home. This quesadilla recipe has a slight variation on the sausage called for as we used Polish sausage instead. Ingredients:
4 ounces of mozzarella cheese, grated |
4 ounces of cheddar cheese, grated |
8 ounces cooked chorizo (sausage), outer casing removed or ham, diced |
4 scallions, finely chopped |
2 fresh green chilies, seeded and finely chopped |
salt and pepper |
8 flour tortillas |
vegetable oil, for brushing |
Directions:
1. Place the cheeses, chorizo, scallions, chilies, and salt and pepper to taste in a bowl and mix together. 2. Divide the mixture between 4 flour tortillas then top with the remaining tortillas. 3. Brush a large, nonstick skillet with oil and heat over medium heat. 4. Add one quesadilla and cook, pressing down with a spatula for 4-5 minutes 5. Underside should be crisp and lightly browned. 6. Turn over and cook the other side until the cheese is melted. 7. Remove from the skillet and keep warm. 8. Cook the remaining quesadillas individually. 9. Cut each quesadilla into quarters. 10. Serve while still warm! |
