A recipe from Nicaragua I found on the internet. Ingredients:
1 lb chorizo sausage, sliced |
2 cups rice, cooked |
3 cups beans, cooked |
1 tablespoon olive oil |
3 garlic cloves, minced |
1 tablespoon ground chipotle chile pepper |
1 teaspoon garlic powder |
1 teaspoon onion powder |
1 teaspoon dried cilantro |
1 teaspoon annatto seasoning |
1 medium onion, chopped |
salt and pepper |
Directions:
1. Cook rice as directed. 2. In a large skillet, saute onion, garlic and chorizo in olive oil. When onion is transparent, drain grease and add remaining ingredients. 3. Cook until warmed through. 4. Stir into cooked rice and serve. |
