This is a very hearty and very tasty soup. I got this friend from a neighbor who makes this on cold winter nights. He usually serves it with homemade cornbread and it is a great hearty meal. Enjoy Ingredients:
1 tablespoon dried new mexican chilies crushed |
1 pound smoked chorizo sausage crumbled |
1 large onion chopped |
3 carrots diced |
1 cup celery chopped |
2 cups cooked kidney beans |
2 tomatoes peeled and diced |
1 cup broth from cooked kidney beans |
3 cups water |
1 teaspoon worcestershire sauce |
1 teaspoon white vinegar |
sour cream |
Directions:
1. Briefly sauté chorizo then add onion, carrots and celery and sauté over medium heat for 2 minutes. 2. Combine with remaining ingredients except sour cream and simmer 30 minutes. 3. Garnish with sour cream and serve. |
