Chopstick Chicken Salad With Ginger Soy Dressing |

This is a filling main course salad for warm summer days. No need to heat up your kitchen. Ingredients:
dressing |
make dressing and refrigerate 2 hours or overnight. |
1 1/4 c white wine vinegar |
1 1/2 c sugar |
2 t kosher salt |
2 t coarsely ground black pepper |
1 t salad oil |
1 t minced fresh ginger |
1 t sesame oil |
2 t soy sauce |
salad |
3 c mixed greens |
1/2 head iceberg lettuce, cored, shredded |
2 boneless skinless, chicken breasts ( or 8 oz cooked chicken breasts ) |
1 c crispy chow mein noodles |
1 t freshly chopped cilantro |
1/4 c red bell pepper strips |
1/2 c celery sliced into 1/8 x 1 1/2 inch strips |
1/2 c sugar snap peas or snow peas cut into one inch pieces |
1/2 c dressing |
Directions:
1. FOR DRESSING: 2. Make dressing and refrigerate 2 hours or overnight. 3. Combine all ingredients in a bowl and stir until sugar dissolves. 4. Cover and refrigerate. 5. Makes 2 cups 6. FOR SALAD: 7. Combine mixed greens and iceberg lettuce, 1/2 of the chicken, 1/2 of the chow mein noodles, all the cilantro, bell pepper, celery and snap peas. 8. Ladle 2/3 cup dressing over salad and toss to coat. 9. Transfer salad to chilled serving plates. 10. Place remaining chicken and chow mein noodles on top. 11. Drizzle with remaining dressing. |
