Chopped Salad With Blue Cheese |

I got this from a Wal-Mart recipe card. Ingredients:
1/2 cup reduced-fat mayonnaise |
1/2 cup crumbled blue cheese |
2 tablespoons red wine vinegar |
1 tablespoon lemon juice |
1 tablespoon lemon rind |
1/8 teaspoon red pepper |
2 1/2 cups finely chopped romaine lettuce |
1 1/2 cups finely chopped celery |
3/4 cup finely chopped deli turkey |
1/2 cup finely chopped salami |
1/2 cup finely chopped deli ham |
1/2 cup finely chopped carrot |
1/3 cup finely chopped radish |
2 tablespoons finely chopped fresh parsley |
1 (15 1/2 ounce) can chickpeas, rinsed and drained |
Directions:
1. Combine mayonnaise, blue cheese, vinegar, lemon juice, lemon rind, and red pepper in a small bowl. 2. Combine lettuce, celery, turkey, salami, ham, carrots, radishes, parsley and chickpeas in a large bowl. 3. Top with dressing and serve. |
