Chopped Salad With Bacon & Avocado |

I love this salad. It’s easy to make and the ingredients are delicious together. I’ve served it to family and friends many times. Perfect for guests or an everyday meal. A winner every time! Ingredients:
8 cups romaine lettuce, chopped |
1 red bell pepper, chopped |
2 large roma tomatoes, chopped |
1 avocado, diced |
3/4 cup dried cranberries |
1 cup pecans, chopped or 1 cup a couple of handfuls of toasted pine nuts |
8 -10 slices bacon, cooked crisp and crumbled |
6 ounces feta cheese, crumbled |
1/4-1/2 cup of any garlic flavored salad dressing (i use garlic expressions) or 1/4-1/2 cup any balsamic vinaigrette |
Directions:
1. In a large, shallow salad bowl, layer the ingredients in the following order: Lettuce, Bell Pepper, Tomato, and Cranberries. 2. Drizzle the dressing over the top, starting with a 1/4 cup. Toss and taste, add more dressing, if desired. 3. Top with Avocado, Feta Cheese, Nuts and Bacon. Gently toss one more time, being careful not to crush avocado. |
