Chopped Romaine, Chicken, And Ramen Noodle Salad |

Salads like this are usually made with cabbage, but I discovered today that chopped romaine makes a yummy salad too. I used leftovers from last night's marinated chicken, however canned chicken would work as well. Read more . This recipe's enough for 1 large luncheon salad or 2 smaller side salads. Ingredients:
1 romaine heart, chopped |
2-3 green onions, chopped |
1 small chicken breast, chopped |
1/2 pkg dry ramen noodles, crushed |
segments from 1 orange |
1/4 cup canola oil |
1/4 cup cider vinegar |
1/4 cup white sugar |
1/2 pkg oriental seasoning mix (from ramen noodles) |
Directions:
1. Chop, wash, and dry lettuce. Place in large bowl, add chopped green onions, chopped chicken, and crushed ramen noodles. 2. In small bowl or small jar, mix the 4 dressing ingredients. Stir/shake to thoroughly combine. Add to lettuce and toss to combine. 3. Section orange, squeeze remaining orange juice directly over salad. Add orange segments. Toss and serve. |
