Chopped Bbq Chicken Salad |

This is a salad that you will crave. It is a hit with everyone I have ever served it to. It's refreshing, crunchy, flavorful and just damn good. Ingredients:
*3-4 cups chicken tenders or boneless, skinless chx breasts, cooked and cut into small cubes and generously smothered in bbq sauce. |
*i head of iceberg lettuce, finely chopped. |
*i can black beans, drained and rinsed |
*1 1/2 cups sweet corn (fresh off the cob preferred but canned is ok) |
*1 1/2 cups jicama (diced into small cubes) |
*3/4 cup firm tomatoes. use only firm parts and dice into small cubes. |
*1 1/2 cup fresh cilantro |
*1/2 cup chopped scallions (optional) |
*7-8 limes, quartered |
*freshly made ranch dressing (you can use bottled, but fresh tastes much better) |
*bag of plain tortilla chips (i prefer yellow corn). |
Directions:
1. Set aside BBQ chicken, limes, ranch dressing and tortilla chips. 2. In a large salad bowl, toss all other ingredients and mix well. 3. To serve: 4. In a separate medium sized bowl, put 1 to 1 1/2 cups salad mix (depending on how hungry you are!). 5. Add a tablespoon or two of ranch dressing and crumble into mixture a good handful of crumbled tortilla chips (crumble chips to approx. 1/2 inch size bits). Toss until the dressing has coated everything. 6. Pour salad mixture onto serving plate and top with about 1/4-1/3 cup BBQ chicken. Serve with 2-4 limes wedges depending on taste (I like a lot of lime on this). 7. Squirt lime on top of salad and enjoy! |
