This is from my Mom's recipe cards. I have not tried these recipes.
Ingredients:
1/2 cup butter
1 cup onion, chopped
1 cup celery, chopped
1 teaspoon salt
1/2 teaspoon pepper
1 1/2-3 teaspoons poultry seasoning, to taste
1 1/2 quarts breadcrumbs
2 eggs, slightly beaten
1 lb chestnuts
1 cup nuts, chopped
3/4 quart cornbread, crumbs unsweetened, made with eggs
2 1/2 cups rice, uncooked
3/4 lb sausage, cooked and drained
chicken giblets
chicken neck
Directions:
1. ** Main Recipe **.
2. Melt butter in skillet.
3. Add onion and celery.
4. Cook stirring frequently about 5 minutes.
5. Add seasoning.
6. Cook about 3 minutes longer.
7. Add to crumbs, toss well.

9. ** Egg Stuffing **.
10. Follow main recipe.
11. Add eggs to crumbs.

13. ** Chestnut Stuffing **.
14. Follow main recipe.
15. Omit 2 cups bread crumbs.
16. Prick shells of chestnuts.
17. Cook in boiling water 15 minutes.
18. Remove shells and skins.
19. Chop nuts.
20. Add to stuffing.

23. Follow main recipe.
24. Add nuts to crumbs.

26. ** Corn Bread Stuffing **.

28. Substitute 1/2 bread crumbs for cornbread crumbs.

32. Omit bread crumbs.
33. Add cooked rice, drained.

37. Add sausage to bread crumbs.
