This is from my Mom's recipe cards. I have not tried these recipes. Ingredients:
1/2 cup butter |
1 cup onion, chopped |
1 cup celery, chopped |
1 teaspoon salt |
1/2 teaspoon pepper |
1 1/2-3 teaspoons poultry seasoning, to taste |
1 1/2 quarts breadcrumbs |
2 eggs, slightly beaten |
1 lb chestnuts |
1 cup nuts, chopped |
3/4 quart cornbread, crumbs unsweetened, made with eggs |
2 1/2 cups rice, uncooked |
3/4 lb sausage, cooked and drained |
chicken giblets |
chicken neck |
Directions:
1. ** Main Recipe **. 2. Melt butter in skillet. 3. Add onion and celery. 4. Cook stirring frequently about 5 minutes. 5. Add seasoning. 6. Cook about 3 minutes longer. 7. Add to crumbs, toss well. 8. ********************. 9. ** Egg Stuffing **. 10. Follow main recipe. 11. Add eggs to crumbs. 12. ********************. 13. ** Chestnut Stuffing **. 14. Follow main recipe. 15. Omit 2 cups bread crumbs. 16. Prick shells of chestnuts. 17. Cook in boiling water 15 minutes. 18. Remove shells and skins. 19. Chop nuts. 20. Add to stuffing. 21. ********************. 22. ** Nut Stuffing **. 23. Follow main recipe. 24. Add nuts to crumbs. 25. ********************. 26. ** Corn Bread Stuffing **. 27. Follow main recipe. 28. Substitute 1/2 bread crumbs for cornbread crumbs. 29. ********************. 30. ** Rice Stuffing **. 31. Follow main recipe. 32. Omit bread crumbs. 33. Add cooked rice, drained. 34. ********************. 35. ** Sausage Stuffing **. 36. Follow main recipe. 37. Add sausage to bread crumbs. 38. ********************. 39. ** Giblet Stuffing **. 40.
