these muffins are simple to prepare,although they are small,they pack a flavor punch!hHigh in fiber. Ingredients:
3/4 cup flour |
1 cup of oat bran |
1/2 cup of brown sugar |
1 tsp. of baking powder |
2 tsp.ground cinnamon |
1/2 tsp. baking soda |
1/8 tsp. allspice |
2 mashed bananas |
1/4 cup skim milk |
1/4 egg substitute |
2 tbsp.cooking oil |
1 tsp. vanilla extract |
Directions:
1. In a large mixing bowl,stir together flour,oat bran,brown sugar,baking powder,cinnamon,baking soda,and allspice. 2. In a medium mixing bowl,combine bananas,milk,egg subsitute,oil,and the vanilla. 3. Add all at once to the flour mixture. 4. Stir until moistened. 5. Spray the muffin pans with cooking spray. 6. Put the batter into muffin cups. 7. bake at 400 degrees for 18 to 20 minutes. 8. You may also add nuts,raisins ,shredded carrots,etc.. |
