Medium hot chili with vegetables. Ingredients:
1 1/2 lbs lean stewing beef |
1 1/2 lbs lean ground beef |
2 onions, diced |
1/2 green pepper, chopped |
5 garlic cloves, finely chopped |
1 celery rib, chopped |
1 small carrot, grated |
1/2 cup turnip, chopped |
1/2 cup cabbage, shredded |
1/4 cup pickled hot peppers, chopped |
1 teaspoon cumin |
3 tablespoons chili powder |
2 teaspoons chilies |
1/4 teaspoon coriander |
28 ounces tomatoes |
14 ounces tomato sauce |
1 cup red wine |
1 teaspoon oregano |
16 ounces kidney beans |
1 tablespoon cornmeal |
10 ounces beef broth |
Directions:
1. 1. Brown minced beef and remove with slotted spoon to large casserole. Brown stewing beef and remove to casserole. 2. 2. Saute onions, pepper, celery, turnip, cabbage in fat in pan. 3. 3. Add cumin, chili powder,chillies,coriander,oregano and salt and pepper to taste. Add beef broth and cornmeal along with garlic, tomatoes and tomato sauce, wine, pepper rings, and rinsed kidney beans. 4. 4. Oven 300 and bake for 2 hours. |
