Choke The Chicken Egg Salad |

Why did the chicken cross the road? Because it was lunch time and she was hungry. So was I and here is what I came up with. Ingredients:
1 cup cooked chicken breast, diced small |
3 hard boiled eggs |
1/4 cup pickle relish |
1/4 cup mayonaise - low fat |
1/4 cup plain yogurt - non-fat |
2/3 cup canned artichoke hearts, chopped |
2 tbsp stoneground brown mustard |
1 stalks celery, minced (quantity to your taste) |
1/2 cup onion minced |
2 tbsp fresh tarragon minced |
1 tsp lemon pepper |
Directions:
1. * In a bowl, mix together chopped eggs, pickle relish, diced celery, chopped onions, tarragon, lemon pepper, and cut up chicken. Blend in mayonnaise until desired consistancy is achieved. 2. * Cover and chill 1 to 2 hours before using. Spread on your choice of bread or serve on a fresh bed of greens or stuff a tomatoe or lap it out of your hand. Whatever makes you happy :) 3. Yield 3.5 cups (28 oz) 4. Servings 4 5. Per Serving 6.
