A simple pretty Christmas cookie. Ingredients:
1 cup butter, softened, not melted |
1 cup brown sugar |
1/2 cup granulated sugar |
2 eggs |
2t vanilla |
2 1/2 cups flour |
1/2 cup cocoa |
1t baking powder |
1/2t baking soda |
1/4t salt |
1 bag andes peppermint crunch pieces |
Directions:
1. Cream butter and sugar 2. Add eggs one at a time, and vanilla, mix well 3. Combine remaining ingredients, other than mint pieces 4. Slowly add to butter/sugar and mix well 5. Add mint pieces and stir by hand just to combine 6. Drop by spoonfuls onto baking sheet or stone and bake at 350 for about 12 minutes. 7. Let cool on sheet for a few minutes, then transfer to wire rack to cool completely. |
