Chocolatey Mint Truffle Cookies |

These little chocolate and peppermint gems are delish! Ingredients:
1 pkg. (6 squares) baker's bittersweet chocolate, chopped |
3/4 cup butter |
1-1/4 cups sugar |
2 eggs |
1-3/4 cups flour |
1/2 tsp. baking powder |
1/3 cup chopped candy canes |
Directions:
1. Preheat oven to 350°F. 2. Microwave chocolate and butter in medium microwaveable bowl on MEDIUM 2 min. or until butter is melted. Ot you can melt butter and chocolate in a double boiler. 3. Stir until chocolate is completely melted. 4. Stir in sugar. 5. Add eggs, 1 at a time, mixing until well blended after each addition. Add combined flour and baking powder; mix well. (Dough will be very soft.) 6. Cover and refrigerate at least 2 hours or overnight. 7. Roll heaping teaspoonfuls of dough into 1-inch balls. 8. Place, 2-inches apart, on greased baking sheet. 9. Bake for 9 to 11 min. or until lightly browned. (Do not overbake.) Immediately sprinkle with chopped candy canes. 10. Cool completely on wire racks. 11. Store in an airtight container at room temperature. |
