l love the flavor of chocolate and zucchini together..love chocolate zucchini loaf and love this recipe for muffins...hope you all enjoy. Ingredients:
3/4 c butter |
2 c sugar |
3 lg eggs |
2 tsp almond extract |
2 1/2 tsp baking powder |
1 1/2 tsp baking soda |
1/2 tsp salt |
1/2 c milk |
2 c grated zucchini |
2 1/2 c all purpose flour |
1/2 c cocoa powder |
2 tsp cinnamon |
sliced almonds |
Directions:
1. Preheat oven to 375. 2. Line 2 12 cup muffin tins. 3. Cream butter, add sugar and mix till creamy. Add eggs onea ta time mixing after each. 4. Add almond extract and milk and mix well. Agg zucchini and mix. 5. Stir together dry ingredients and stin into batter until moistened. Fill tins and top with sliced almonds. Bake approx 20 - 25 mins. 6. These freeze well!! |
